Week 1 Atlanta



Its Danny the Resident Chef.  This week we start the season by playing the Atlanta Falcons.  The menu for this week will be Chicken and Waffles..no joke! So make a batch of this and head to your friends house, or the tailgate.

Star-divide

Chicken and Waffles

  • 1 whole chicken cut into 8 pieces
  • 1 cup of flour
  • 1 tblsp of Seasoned Salt
  • 2 tsp of cayenne pepper
  • 2 cups of buttermilk
  • Your favorite waffle recipe (eggo waffles are okay if you do not own a waffle iron)

Place your cut up chicken in a shallow pan. Pour buttermilk with 1tsp of cayenne mixed in.  Leave aside for 6 hours or overnight.  Take chicken out of buttermilk marinade, but do not pat dry.  Coat chicken with seasoned flour.  Heat oil, or shortening in a deep fryer according to manufacturers instructions.  If you do not have a fryer grab a deep heavy based skillet. Fill halfway with oil as the oil will expand when heated.  Cook chicken in oil for 15 to 20 minutes or until the thermometer reads 165 degrees.  Serve with fresh waffles with honey butter and a little bit of hot sauce.

Hmmm...I don't really have any "southern" recipes

Aside from Cajun Fish, which I haven’t made in a few years, so I might be amiss on some ingredients…IIRC, this recipe works best with fillets, as opposed to the whole fish.

Brown butter in pan. Sweet cream salted has the most flavor, IMO.

Add fish (any fresh water fish will do).

Sprinkle a liberal amount of Lemon Pepper, flip.

Quite a bit of Cajun Seasoning (as I said, it’s been a while, so I don’t remember what brand I used, sorry).

Add more butter if it’s burning off too much.

A few dashes of Lime juice (fresh or ReaLime, doesn’t matter because it’s cooking).

If you feel daring, you can throw a few dashes of Tapatio hot sauce on it, if not, sprinkle some Raw Cane Sugar mixed with some Sea Salt.

Finish cooking, serve with flash-fried (pan) veggies, and squeeze fresh lime juice over all of it.

Alternative to flash-fried veggies: Boiled spinach, with sea salt and lemon juice. (still use the lime juice on fish).

Grilling alternative: Marinate cleaned fish in all ingredients for at least 3 hours, making sure you stuffed the inside of the fish with a good amount of the seasoning. Wrap fish in foil (shiny side in), throw on grill. You’ll have to check it frequently to make sure it doesn’t get overcooked (I suggest the Ove-Glove, or however it’s spelled. I have a knock-off one).

When it’s done cooking, add the lime juice, and serve.

I think that was how I did it…LOL, so don’t hold it against me if it doesn’t work.

Make sure you only use freshwater fish with this recipe

I’ve seen people try to do ocean fish Cajun style, and it’s way too salty.

I forgot to mention, if you’re feeling extra adventurous, you can add in some cayenne pepper powder as well.

best fish to do it with is catfish

i hate catfish because its kinda has a dirty taste to it. But if you put the cajun seasoning,(Paul Prudhomme or Old Bay does the trick) it’ll be able to mask the taste and make it delicious

I noticed that about catfish too

Kinda gritty tasting.

I found trout to be the best. Steelhead works too, but you really have to have a taste for salmon for it to be any good.

Hmmm…Maybe I should have said any freshwater WHITE fish. Meh. The last fish I cooked was Tilapia fillets. I really don’t like fish when it tastes like fish, if that makes any sense.

Salmon is good for a cajun seasoning as well. But do not fry it

Tilapia is a great mild fish. Could be cooked any way. If a fish smells like fish its pretty good, but if its a strong smell to it that carp has to go

Up here we would use Pickerel

(aka Walleye Pike) though trout, lake trout, bass and catfish are all available along with rough fish like freshwater drum and carp.

How do I break it to the cat that since he has been declawed, the rabbit he sees in our backyard would kick his sorry butt?

No steaks? No burgers? Oof…There’s only so far that you can push a man…I gotta have my burgers and steaks. The wife can’t have pork, but I don’t really like it that much myself, so there’s never any in the house.

My freezer is stuffed with steaks and hamburger meat. Mmmmm….Steak…

I have steak once a week

I used to love

weisswurst (pardon the spelling) in a bun. My mother used to make what she called german style cabbage rolls. They were stuffed with rice and ground pork. She learned it from my paternal grandmother (who was magyar) who learned it from some germans (who were probably mennonites). A lot of german food around here is based on Mennonite recipes.

spelling is accurate

US (and canadian, I would guess) don’t have the ß sign for Weißwurst, so a double ss is the perfect substitute. Also, love those cabbage rolls! They really are delicious :)
